If I were really honest with you, I would call this post “what we meant to eat.” Somehow, the last two weeks got the better of us and we just went crazy off of the menu. My intentions of making spectacular meals because I had a four-day weekend just fell flat. Oh well. Some weeks taste phenomenal, some weeks taste like leftovers. 

So, without further ado, here is what we ate:


Portobello, Broccoli, and Red Pepper Melts

Delish. Just make sure you use real cheese, instead of accidentally buying processed. It will make a huge difference. You just can’t cut back on quality, my friends.

ImageVegetable Lasagna

Holy moly, we loved this. We ate every bit of the left overs. Just make sure you cut the eggplant and zucchini into small pieces, rather than just slicing it. Or, if you do slice it, slice thinly.

ImageRoasted Asparagus and peanuts.

Yep, just pop open a can of peanuts and you have dinner…the asparagus was amazing, though. Go out and buy some, now, before the season is over!

I promise, that is really all that is worth telling you about. Sure, we had take-out pizza one night, and I had an incident while making Spaghetti Carbonara that made it mostly inedible, but it’s not really worth talking about….
